    Default how do tapped single coils work?

    does it just come with another wire that does the softer thing.

    Exactly. During the winding process, they pause before they're completely done, and add another wire, or "tap". Then they finish the winding. Now you have a second "hot" wire that doesn't use quite all of the coil to give you a different, probably lessor, output.
