Dave Murray and Adrian Smith, Martin Barre, Steve Clark and Phil Collen, Angus and Malcolm, Slash, Trey Azagthoth, Chuck Schuldiner, Satch, Marty Friedman.
Can I pick three musicians? One deceased? If so, Paul McCartney, George Harrison, and Ring Starr. If I was limited to only one musician from any time, it would be John Lennon, or maybe Pete Townshend.

korn or Crystal Method
Turn me on, Dead Man.

Billy G (it's a given!)
Clapton (how many times can you say you jammed with God!)
Beck (not sure I'd play much though!)
Joe Perry (he's just too cool)
Jay Z (worlds greatest MC and Im betting he could get a nasty groove with a rock guitar player!)
Joss Stone (what a voice)
Buddy Guy (the master!)
Too many to list really...
I find this a tricky one.
There's a huge list of people I'd love to be on stage with , just for the honour, with Jeff beck at the top.
But if I could have ten minutes on stage with someone I'd like it to be more than just standing at the back playing like a backing tape, I'd like to be involved.
Actually I'll still go with beck, but I'd be playing bass with Vinnie Calouta (SPL) on drums and more of a free form groove rather than an actual song.
I think I'd die happy after something like that.
It's a valve sporker... it sporks valves

Pearl Jam.
I grew up loving those guys, that would be a dream come true! Mike and Stone always seem like really down to earth guys that would have fun jamming with a fan on stage.
John Mayer seems like a fun guy to jam with too
As far as more modern day artists, I'd love to play backup on a Chris Carrabba tune, that guy is one of my biggest influences.
I’m not foolin’; Brittany Spears. Dig if you will; my band is well-known, but it would be just me there on my all black strat out front on stage with her on some big yet meaningless awards show and playing a super rocked up version of one of her songs, or possibly a new one altogether. She’d be sluttin’ it and I’d be struttin’ it as I play these melodic yet insanely heavy f’n riffs that control her body. She in turn controls my mind by the way she sings, smells and moves. It would essentially be like when Slash hooked up with Michael Jackson as far as the unlikely combination, only hetero and NC-17. And Kanye would *not* interrupt. Not this.
If it absolutely had to be another guitar player then it would probably be that Billy Joe Brown or whatever his name is from Green Day, as at least I know I could outplay him.
