Grounding issues.
So I got this new pickups (Area '61) and wired them up a few hours ago.
They all work and all is fine and dandy, but I'm getting a buzz which
goes away if I touch pickups, bridge, input jack and so forth.
I checked all the grounding spots before I completed the surgery
and they seemed fine, but I'm by no means an electrician,
so what did I miss ?

Is there a connection from ground to bridge?

It's a shielding issue. When you touch the bridge you're grounded through its connection back through the amp, and your body then acts as a shield blocking RF noise from getting to the electronics.

Since you are in europe, this is called 50Hz hum. It is called 60hz in US. You need to shield your electronics based on faraday's cage principle. You can get some detailed info from guitarnuts.com
