Thread: BTMN Lasagna Day

    Arrow BTMN Lasagna Day

    12 Lasagna noodles
    1 15 oz Ricotta cheese
    2 large eggs
    1/2 cup grated Parmesan
    3 cups shredded Mozarella
    24 oz Paul Newman Sockarooni Sauce
    15 oz Classico Sundried Tomato Alfredo sauce
    1 lb sweet Italian turkey sausage
    1 lb ground turkey

    Preheat oven to 350 degrees F, 11x13x2 or 3 inch inch large pan needed,

    Fry sausage until crumbly and browned. Drain if needed. Repeat with ground turkey salt and peppered to taste. Blend sauces, add sausage, add ground turkey. set aside. Mix ricotta, eggs, and parmesan.

    Spread a layer of meat sauce, place 3-4 noodles on sauce. Layer meat sauce and then about 1/3 of Ricotta mix and then spread a handful or so of Mozzarella, 3-4 noodles, sauce, ricotta mix, mozarella, 3-4 noodles, sauce, ricotta mix, mozarella. Wrap tightly with foil and bake 60 minutes. Remove, uncover and baked extra 15 minute with broiler on last 5 minutes. Let rest 10-15 minutes before serving.

    Sounds great. I'm tired of everyone using pork in italian food, I can't eat it! Turkey sounds like it would work fine in something like this. Awesome, man.
    Wait... Do you partially cook the noodles first? I haven't made lasagna in ten years.

    I prefer the real pork sausage, but that's not a deal breaker for me. Cottage cheese? I grew up with my mom substituting cottage cheese for ricotta and I can't stand it. I like reciepe's to be as authentic as possible. I'd rather eat the real deal, calories and all, less often than eat it more with low fat, substituted stuff.

    After watching the history or discovery channel document feeding sailors on the huge ships they make it sound like every meal is gourmet fair. I know it's hard to cook great food in such large batches every time, but those shows make it sound like sailors eat better aboard ship than they do at home.

    I recall you mentioning that before. I might try to see if those are available, I'm sure they are, here in St. Pete next time. I know just the store to look too.

    Thanks gents. I had this with a lettuce and tomato salad topped with creamy italian dressing and cresent rolls. I also put 3 medium chopped fresh mushrooms in my lasagna but left it off the main recipe. Add as you wish. Thawed frozen spinach chopped up works as does fresh chopped. Your tastes may vary.

    Not just straight out of the cup for me.

    Drain as much fluid as possible, then add salt to taste, and some dried oregano or basil as well.
    Whisk in one egg along with other ingredients. The egg adds some more protein, and firms up the texture.

    Yeah I always drain it . . . and basil/oregano/garlic/onions usually make their way into any itialian dish that I'm making. I find that ricotta's too salty, that's why I don't like it as much . . . I would never add more salt to the cottage cheese.

    I use regular noodles, but seal them into the pan with foil. The moisture from the sauce and veggies cook the noodles.

    That is a crying shame. Here I thought they were at least feeding the men and women who are in harms way well on a daily basis. Nothing, nothing works unless people get nutritious, decent tasting food to fortify their bodies for all the hard work you guys do. It's as important mentally as it is physically. You can survive on MRE's for 6 months if you have to, but you NEED good tasting food to make you FEEL on top of your game. I hate to see the military skimping on feeding the troops well.

    I barely have a pot to piss in, but when you get home I'm buying your first meal back. I'll send you a gift card to eat someplace good in your home town. You deserve a great meal.
