Love don cab. Saw them in Philly a few years ago and they were great. Just saw dyrhythmia in Brooklyn last week and they are awesome. A nice metal math rock feel. Also, darkest hour, not a fan of their recent music and not instrumental, has a song, Aequitas Veritas, that is a great instrumental song with help from at the gates and a bunch of other people.

Ok. Newer and instrumental. Care to be more specific?
Otherwise, of the top of my head:
Mogwai
65 Days of Static
And So I Watch You From Afar
Animals as Leaders
Russian Circles
Liquid Tension Experiment
Sound Tribe Sector 9
Beats Antique
Some post-rock, some proggy stuff, some electronic/live/jam/weird thing, some oriental hip-hop but all of them very good.
